Stew peas is an old traditional Jamaican recipe thast is very hearty. Made with stewing been pigstail and kidney beans that will surley fill you up. Our grandma used to make this some saturdays and we would always look forward to it.
Stew peas
- 400g Red kidney beans
- ½ lb stewing beef
- ½ lb Pigs tail (Optional)
- 4 Branches of fresh thyme
- 2 spring onions
- 400g coconut milk
- 1 medium chopped onion
- 4 cloves of garlic
- 6 Dumpling spinners
- 1 tsp. Black pepper
- 1tsp. All-purpose seasoning
- 1tsp paprika
- 2 cups water
- 1 scotch bonnet pepper
- ½ cup chopped carrots
- 1 tbsp. corn-starch / flour
- 2 beef stocks.
- 1 tsp pimento seeds
- Firstly you’ll need to soak your red kidney beans in a pot with water overnight (water slightly above peas)
- You’ll also need to soak your pigtails overnight in water (Optional)
- Season the stewing beef with black pepper, all-purpose seasoning and paprika and marinate overnight
- Use the pot you used to soak the red peas in and add the stewing beef and pigtails (optional) and cover with 2 cups of water, cover and cook for 30 mins until meat is tender.
- Then add add 1 can of coconut milk and stir well
- Then and add spring onion, fresh thyme, garlic, onions, scotch bonnet pepper,pimento seeds. carrots and mix together then cook for 15 mins.
- Make dumplings and spin them into small thin twigs and put into the pot and simmer for 15 more minutes.
- Thicken stew with 1 tbsp. corn-starch/ flour and mix. Or add 2 beef stock.
