A traditional Caribbean Christmas dish. This tender & juicy ham joint with a sweet glaze will have you guests drooling for more! Please bare in mind the heavy the ham you use the longer you’ll have to roast in the oven for. Enjoy and merry Christmas!

  • 2.7kg Gammon Ham
  • 4-6 Pineapple rings
  • 4-6 Glazed cherries
  • 3 cup Water
  • ½ cup orange juice/Pineapple juice
  • 1 tsp. Ginger
  • 15-20 cloves
  • 1 cup Brown sugar
  • 340g Guava jelly
  • 170g honey
  • 1tsp. nutmeg
  • 1tsp. cinnamon
  • 1 tsp. All purpose seasoning Directions
  1. Wash ham with lemon, vinegar and water then pat dry.
  2. Then wrap Ham with foil and place on a roasting pan with a rack.
  3. Add 1 cup of water to the pan to add moisture to the ham.
  4. Then add place ham in a pre-heated oven at 180 degrees for 2 hours 

    Making the glaze

  5. On high heat add 2 cups of water to your saucepan,
  6. Followed by ½ cup of orange or pineapple juice.
  7. Then add 1 tsp. of dried or fresh ginger and 6 cloves.
  8. Then add 1 cup of brown sugar, honey and guava jelly mix and bring to a boil
  9. Then add nutmeg, cinnamon, and other seasonings.
  10. Cook the glaze for 30 minutes until thick.
     
  11. Take the ham out of the oven after 2 hours and remove the skin, leaving a little bit of fat remaining on the ham.
  12. Then score the top of the ham diagonally twice with a knife, and stud the ham with cloves.
  13. Pour the glaze over the ham and return to the oven for 1/1.5 hour until golden brown
  14. Remove the ham 10 minutes before time and garnish with pineapples and cherries.
