Cornmeal porridge, the smoothest recipe you’ll find! Traditionally this is a breakfast meal, as it fills you up and keeps you full for the majority of your day! We’ve made this recipe extra smooth with no lumps so you can enjoy the richness of the flavour to the max! I remember when our grandmother used to make this for us when we were younger and, obviously as kids, we used to pour as much sugar in as possible! So use sugar to your own discretion.   • 1 & 1/2 cups Cornmeal
  • 1/2 Cup coconut milk
  • 1 Cup Whole milk/soya
  • 4 Cups water
  • 1tsp Cinnamon
  • 1tsp Nutmeg
  • Pinch of salt
  • 2 tbsp Sugar
  • 1 tsp vanilla essence/extract
  • 2 tbsp sweet condensed milk/ evaporated milk
  1. Add 1 1/2 Cups of Cornmeal into a bowl
  2. Then add 1/2 cup of coconut milk
  3. 1 cup of Whole milk
  4. Then mix together
  5. Pour 4 cups of water into a pot and bring to a boil on high heat
  6. Pour the cornmeal mix into the pot and stir until mixture becomes thick.
  7. Once mixture starts to pop turn to medium heat
  8. Then add 1 tsp of vanilla
    1 tsp of nutmeg
    1 tsp Cinnamon
    Pinch of salt
    2 tbsp of sweet condensed milk
    2 tbsp sugar
  9. Then mix together
  10. Turn to low medium heat and cook and simmer for 20 mins
  11. Let the cornmeal rest for 10 mins then serve.
