Nanny’s famous curry chicken recipe has been used for years, all the family had it all time growing up. We’ve decided to get Nanny cooking on video for the first time with this recipe for mother’s day. Treat your mum, your wife or aunty with this delicious dish! We had to add nanny’s infamous coleslaw recipe to go with it too! Enjoy!
- Curry Chicken
First you haffi wash unuh chicken and season it proper with salt, pepper, all purpose, curry powder, pimento, onions, garlic and thyme. Let the ting marinate for a few hours or if you have time overnight is even better.
Now you need to use a Dutch pot, mi love Dutch pot, it mek di ting cook quickly you see! Use a likkle vegetable, and put cooker on a medium heat, then take off all the onions, garlic, and thyme off the chicken and place one piece at a time in the pot, and cook di meat until brown.
Once meat is all brown, give it a mix! Then add back in the onions, garlic and thyme. Along with 1 scotch bonnet pepper. Add likkle chicken bisto with water and cook until meat is tender!
3lb Chicken legs & thighs (Skin off and chopped into medium pieces)
2 tbsp. vegetable oil
1 tsp. salt
1tsp. Black pepper
1 tbsp. All purpose all seasoning
5 tbsp. Curry powder
1 tsp. ground pimento
1 medium onion diced
4 garlic cloves minced
1 thumb ginger
4-6 sprigs thyme
1 scotch bonnet pepper
Chicken bisto gravy 2tbsp. with 250ml water
Coleslaw
¼ white cabbages thinly sliced
3 carrots grater
4 tbsp. mayonnaise
1 tbsp. salad cream
1 tsp salt
1tsp. black pepper
2 spring onions chopped
1 tbsp. vinegar
100g sweet corn

COLESLAW METHOD
Finely cut up your cabbage in thin slices then add to a mixing bowl, then grater your carrots and add in your mayo and salad cream, season with salt, pepper and give it a mix. Then add in sliced spring onions and sweetcorn and give another mix. Finish off with likkle vinegar.
