Original Flava’s Mackerel Run down

  • 1 Large Fresh Mackerel (Cut into pieces)
  • 2 Green bananas
  • 2 Dumplings
  • 2/3 cups Coconut milk
  • 1 cup mixed peppers (Largely cut)
  • 1 medium onion
  • 4 cloves garlic
  • 3 chopped spring onions
  • 1 tsp pimento seeds
  • 1 tsp curry powder
  • 1tsp fish seasoning
  • 1tsp all-purpose seasoning
  • 1 scotch bonnet pepper
  • 1tsp thyme
  1. Wash and Remove the bones from the Mackerel and cut into 2-3 inch pieces
  2. Let the Mackerel soak in cold water overnight or leave in boiling water for 30 minutes and drain.
  3. Pour 2/3 cups of coconut milk in a frying  pan on high heat,   Stir coconut milk until it thickens and forms thick and creamy  consistency
  4. Then add 1 chopped spring onion.  1 medium chopped onion, 3 garlic cloves and sortey for 3 minutes.
  5. Add makerel pieces to frying pan and cook for 10 minutes
  6. Then add 1 whole scotch bonnet, 1 tsp thyme, 1tsp, fish seasoning, 1 tsp, curry powder and cook for another 10 minutes.
  7. Then add 1tsp pimento seeds and chopped mixed peppers and simmer for 5 minutes
  8. Serve hot with boiled green bananas and boiled dumplings.
  9. Slit green banana and place in boiling hot water for 20 minutes
  10. To make dumplings mix 2 cups of plain 1tsp of sugar and gradually add 1 cup of water and mix together to form a dough. Roll dough into a circle shape and place in boiling water for 20 mins.
