Crispy Coconut & Curry fried Chicken
- 1lb Chicken Legs
- 1 tsp Salt
- 2 tsp. Pepper
- 4 tbsp. All purpose
- 4 tbsp. Curry powder
- 2 tsp. ginger
- 2 tsp thyme – recommended optional
- 2 tbsp. paprika
- 1 cup of coconut milk
- 3 cups of flour
- 5/6 cups of vegetable oil (Enough for deep fry)
- 2 whisked eggs – optional
- Season Chicken with 1 tsp Salt, 1 tsp. Pepper, 2 tbsp. All purpose, 1 tsp. Ginger 2 tbsp. Curry powder, 1 tsp thyme, 1 tbsp. paprika and add 1 Cup of coconut milk mix together and marinate for up to 2 hrs.
- Add 3-4 cups of all-purpose flour in a bowl and add 1 tsp. Pepper, 2 tbsp. All purpose, 2 tbsp. Curry powder, 1 tsp thyme, 1 tbsp. paprika and mix together
- Then coat the chicken with the flour and set aside.
- 5 cups Vegetable oil (deep fry) in a big pot and heat up for 5 mins making sure it’s really hot
- Then Add the Flour coated chicken in the frying pot and fry for 15 mins until golden brown.
- Place on kitchen towel and dry off excess oil.
- Then place in pre-heated oven for 15 mins until crispy.
