Callaloo fritters

Easy, tasty and packed full of flavour! Try this vegan/ veggie recipe for your breakfast and brunch meals. The spices are the key to the FLAVA of this recipe! Give it a try your family and friends will love you for it!

  1. Firstly add 2 tbsp. of vegetable oil to a frying pan on high heat, and add 1 medium onion, garlic cloves and mixed peppers and sortey for 3 mins.
  2. Then add pepper, all purpose, paprika, garlic, ginger, salt, Thyme, then add callaloo and mix together.
  3. Add 1 chopped scotch bonnet pepper, and 1 chopped tomato along with seasonings.
  4. Set aside.
  5. In a separate bowl civ 400g flour, and add 1 tsp. baking powder, all purpose seasoning, paprika, garlic, and callaloo mix along with water and mix together until you get a sloppy consistency.
  6. Add 4 tbsp. vegetable oil and shallow fry a large spoonful of the Callao mix and cook for 5 mins on each side on medium heat until golden brown.
  7. Rest on paper towel to remove excess oil.
  8. Then rest for 10 minutes and serve.
