Ackee and Avocado salad
- 1 can Ackee 540g
- 1tsp sea salt
- 1tsp black pepper
- 1tsp Thyme
- 1tsp scotch bonnet pepper
- 3 cloves garlic
- 1/4 onion
- 1 spring onion
- 1 tbsp. Cocunut oil
- 1/4 Lettuce
- 1 tomato
- 1/4 red pepper
- 1/4 Green pepper
- 1/2 cucumber
- 1 avocado
- Lemon juice
- Chop and Combine 1/4 Lettuce, 1 tomato, 1/4 redpepper, 1/4 Green pepper, 1/2 cucumber
1 avacado in a bowl and mix together. Then place In fridge. - On a frying pan on high heat use 1 tbsp. Cocunut oil sortay 1/2 chopped onion, 3 cloves of garlic 1 chopped spring onion 1tsp scotch bonnet pepper for 3 mins
- Then drain the tinned ackee and carefully pour into frying pan and let it sit.
- Add 1 tsp sea salt, 1tsp black pepper, 1tsp thyme and carefully fold over the ackee and simmer for 5 mins.
- Combine ackee with salad squeeze lemon juice and serve.
